Never during dinner

No performer works during dinner service. The focus is on the plate in front of them - and you're competing with cutlery, waiters and conversation. Nobody wins that.

Entertainers won't perform during dinner, and it isn't precious - it's arithmetic. When people are eating, their attention is on the food. Add cutlery on plates, waiters moving between tables and forty separate conversations, and even a very good act can't hold a room.

You're spending real money on entertainment. Put it where it can land: before the meal, between courses if the venue can hold service, or after plates are cleared. The same act in the right slot is a different show entirely.
