Brief your wait staff around roving acts

Roving performers work a group for a few minutes at a time. Ask staff to hold off on that group - guests will survive five minutes without a canape.

When you've booked roving entertainment for canapes or cocktails, brief the wait staff before the event: don't interrupt the group a performer is working.

The performer is only with each group for a few minutes. Those guests are almost always deep in it and enjoying themselves - and they lose track of everything else. Then someone arrives mid-routine with a tray of hors d'oeuvres, and it's over. One sentence at the pre-event briefing prevents it.
